Recipe - Pan Fried Salmon with Lemon Capers Sauce

( This simple salmon recipe is the perfect option for weeknight dinner!

Lemon Capers Sauce
Ingredients Amount
Lemon Juice 2 tablespoons
Capers, drained 2 tablespoons
Olive Oil 1 tablespoons
Salmon Fillets
Ingredients Amount
Salmon Fillets, skin on 4 pieces (~6 oz each)
Sea Salt 1.5 teaspoons
Ground Black Pepper 1 teaspoon
Butter 3 tablespoons
Method of Preparation:
1. Rinse salmon fillets and pat dry thoroughly with paper towels.
2. Season fillets with salt and black pepper.  Set aside.
3. Warm up non-stick frying pan with oil over medium-high heat.
4. Pan fried the salmon fillets with the skin side facing up until golden brown, about 5 minutes.  Turn the fish over and cook until it just starts to flake and the skin is crispy, about 6 minutes.  
5. Heat up butter in a small sauce pan at medium heat.
6. Add capers to the pan and cook for about 2 minutes, then add lemon juice. Simmer for 1 minute and turn off the heat.
7. To serve, divide among serving plates and top with the prepared Lemon Capers Sauce.  Garnish with finely chopped parsley.
8. Serve alongside with your favorite seasonal vegetables.
